Sun-dried beef is a specialty bearing the imprint of the J'rai people on the Gia Lai plateau – where harsh sun and wind become the most important ingredients in the processing. Fresh beef is cleaned of tendons and fat, sliced thickly, marinated with salt and local spices, then sun-dried for exactly one day in the highlands. The strong sun, fierce wind, and large day-night temperature difference create a dryness and flavor that cannot be replicated anywhere else.

What makes Gia Lai sun-dried beef completely different from other places is the "muối kiến vàng" (yellow ant salt) – an indigenous spice of the J'rai people made from yellow ants and ant eggs, which has a light sourness, subtle saltiness, and a very unique aroma. Marinating beef with yellow ant salt and then sun-drying it results in a finished product with a beautiful dark red color, an enticing aroma, and a taste that reveals the natural beef flavor gradually infused with each layer of seasoning as you chew.

Grilling over charcoal is the best way – grill over medium heat until both sides are evenly charred, the meat is rendered, and it has a smoky aroma. You can also pan-fry with a little oil or dry-roast in a cast-iron pan. Serve with a separate yellow ant salt dipping sauce, fresh herbs, cucumber, and hot rice or wrap in rice paper and dip in black soy sauce, Tây Nguyên style.

Store in the refrigerator, use within 3 months from the manufacturing date. After opening: use within 5-7 days if kept in the refrigerator, or store in the freezer for up to 2 months. Thaw naturally in the refrigerator before cooking; do not thaw with hot water as it will affect the flavor.
